Meet the bartender: Derek Lovell
Hospitality is a family affair for Derek Lovell, who was inspired by his parents and four siblings to break into the bar business. Now the Colorado native slings creative cocktails and other drinks at The Bar, where he’s taken the already popular program to the next level with updated glassware, house-made bitters, innovative cocktails, and an all-new environment. “I really get excited when I get to hand-make any cool ingredients,” says Lovell, whose résumé includes Kenichi in Aspen, Macondo in NYC, Jay’s Bistro in Fort Collins, and 39 Degrees in Aspen. His latest creation is a Black ’n White, a drink that’s white on the bottom and topped with a black foam that’s violet in flavor and darkened with a touch of squid ink. This modern style with a classic flavor profile is just what Lovell likes best. “It's so much fun mixing the old world with the new since I have such a great appreciation for both,” he says.
